White Arborio Rice

This rice dish is foundational to many of the nosotto recipes found here at Cinder Hill Living.

Makes 3 Cups

Ingredients
 Organic Avocado Oil - 2 tbsp
 White Arborio Rice - 1 ½ cups rinsed
 Filtered Water - 2 cups

Prepare the rice:
Add the avocado oil, rice and water to the Instant Pot and stir to combine. Secure the lid and set the Instant Pot to pressure cook for 10 minutes.

Once the rice is cooked:
Let the steam escape naturally but in a time crunch, release the steam according to the manufacturer’s instructions.

Finish the rice:
Scoop out the rice with a large spoon and spread out onto a large baking sheet. Fluff with a fork as needed and let cool. Alternatively, use right away in your favorite soups or other dishes.

Store the rice:
Store in an airtight container for up to 4 days.

Notes: Preparing white rice in a pressure cooker greatly reduces its lectin content.
