Toasted Coconut Flakes

The perfect topping to your favorite bowl, pudding, ice cream, shake or dessert and not to mention the added benefit of dietary fiber. Oh so good.

Makes 1/2 Cup

Ingredients
 Unsweetened Coconut Flakes - 1/2 cup (see Notes)
 Kosher Salt

Prepare the oven & pan:
Preheat the oven to 325°. On a small rimmed baking sheet, scatter the flaked coconut and sprinkle with a pinch salt.

Toast the coconut:
Bake for 4 to 5 minutes until lightly golden.

Finish the coconut:
Transfer to a small bowl and set aside to let cool. Use as a garnish for your favorite bowl or drink or as a topping for your favorite dessert.

Notes:  I prefer Bob's Red Mill Unsweetened Coconut Flakes as they have great a texture and flavor.
