Broccoli prepared in the oven is incredibly delicious as it becomes crispy but retains a solid texture when properly roasted. The secret to this preparation is the high temperature and ungodly amount of olive oil. The high heat caramelizes the florets and the olive oil becomes fantastically buttery. We sometimes eat this as our main entree...it's that good.
Prepare the oven & pan:
Preheat the oven to 450°. Set aside a large rimmed baking sheet.
Prepare the broccoli:
In a large bowl, toss the broccoli florets with the olive oil until well coated. Season the broccoli with salt and let set for 5 minutes to allow the olive oil to be absorbed.
Roast the broccoli:
Transfer the broccoli to the pan allowing at least 1/2 inch space between each piece to allow for proper caramelization. Roast, undisturbed, for 12 to 15 minutes. Serve hot.
Notes: Because the broccoli stems are high on the FODMAPS scale, I trim as much as I can and use only the florets. Choose the highest quality olive oil for this dish.
