A requisite addition for so many different dishes and is a breeze to make! I like my pickled onions simple, which lends to very few ingredients.
Makes About 1 1/2 Cups
Prepare the onions:
Bring the water to a boil. In a heatproof bowl, add the red onions. Pour the boiling water over the red onions and carefully place a plate over the onions so the onions will stay submerged. Soak for 3 minutes.
Make the pickled onions:
Drain the onions and add them back to the bowl. Next, juice the limes over the onions and sprinkle the salt. Stir to combine. Cover the bowl with a clean towel and allow them to pickle at room temperature for 2 to 3 hours until they turn a brilliant pink color, stirring occasionally.
Serve or store the pickled onions:
Serve the onions on top of tacos, burgers, nachos - you name it. The onions can be stored in an air-tight container in the fridge for 4 days.
