Ginger Simple Syrup

I love anything with ginger, so infusing its flavor into a simple syrup just makes sense.

Makes About 1/2 Cup

Ingredients
 Filtered Water - 1/2 cup
 Monkfruit Sweetener - 2 tbsp
 Organic Ginger Root - 2 oz peeled & chopped (about 2 inches)

Make the syrup:
In a small saucepan over medium-high heat, add all the ingredients and stir to dissolve the sweetener. Bring to a boil and boil for 5 minutes. Remove from the heat and let cool completely.

Serve or store the syrup:
Serve in your favorite drink or cocktail or store covered in the fridge for 2 days (see Notes).

Notes:  Before using chilled and stored simple syrup, warm it up in a microwave safe dish or 30 seconds at half power to start with. Adjust the time and power if needed.
