Taquitos are one of my favorite quick foods with that crispy tortilla and flavorful filling, and this recipe is easy to put together any night of the week.
Prepare the oven & pan:
Preheat the oven to 425°. Line a large rimmed baking sheet with parchment paper.
Prepare the filling:
In a large bowl, combine the chicken, onion, tomatoes, both cheeses and cilantro and stir to combine. Set aside.
Prepare the tortillas:
Microwave the stack of tortillas for 30 to 45 seconds on high until warmed through. Carefully remove from the microwave and keep them stacked.
Assemble the taquitos:
Working quickly, take a single tortilla and drizzle avocado oil over one side. Rub the oil over the tortilla, flip over and repeat on the other side. Scoop 2 tbsp of the chicken filling down the middle of the tortilla, then carefully roll it up and place the taquito seam-side down on the prepared pan. Repeat until all the ingredients are gone and all the taquitos are rolled up.
Bake the taquitos:
Bake for 13 to 15 minutes until golden brown.
Serve the taquitos:
Serve the taquitos hot with your favorite garnishes such as guacamole, a squeeze of lime, queso fresco and even sour cream. Pass the green hot sauce.
Notes: Because the skins and seeds of a tomato contain lectins, be sure to only use chopped tomato products that practice removing the skins and seeds in their preparation. Because the skins of almonds contain lectins, use an almond tortilla product that practices removing the skins in their preparation. I like the Siete brand but use your compliant favorite.
