Lectins

A plant’s whole purpose on Earth is to reproduce; therefore, to protect themselves from insects, animals and weather, they rely on their highly evolved defense system – lectins – to ensure their longevity.  Lectins are plant proteins that can be harmful to the humans who consume them causing a potential autoimmune response, digestive discomfort and chronic inflammation to name a few. Damage from lectins can also impact the body’s ability to absorb essential nutrients, starving the body from the nutrition it needs. Further damage may impact the lining of the intestine, leading to leaky gut. Examples of foods that contain lectins include wheat, beans, chile peppers, cashews and tomatoes.

The good news is…is that one can still eat very well and not suffer the terrible consequences of lectins by eliminating or vastly reducing the lectin content found in foods.

That is what our goal is here at Cinder Hill Living. We have been living gluten free, lectin free and low lectin for over 5 years now and have found our niche making homemade, delicious and safe food to enjoy every day all while reaping the extraordinary results of this way of life.
