Cinnamon is one of my favorite spices to work with as its uses vary greatly. From savory dishes and baked goods to mulled ciders and drinks, the possibilities seem endless.
There are more than 50 varieties to choose from, all with their own unique flavor. From Vietnam to Saigon and Sri Lanka, they all have one quality in common…and that is they are all fragrant with a warm, sweet and spicy taste. Ceylon cinnamon, which I love in Mexican cuisine, is easy to crumble whereas Indonesian cinnamon sticks are hard and difficult to crush, perfect for stirring drinks.
Cinnamon may also lend a variety of health benefits from supporting gut health to having an anti-inflammatory effect.
My favorite of all cinnamon is Vietnamese as it is considered to be the sweetest and strongest, but I also love Korintje as it is the one I grew up with.
