Although beets were not common in my home growing up, they have found their place in my lectin free kitchen.
Their deep pink color is spectacular but can actually be found in a variety of colors from pale yellow and even white. And beets are more versatile than one would think. It can be used as a substitute for zucchini and offers additional moisture to baked goods. And its sweet, yet earthy flavor will win just about anybody over.
Beets are one of the superfoods that are critical to my diet. A lectin free lifestyle encourages consuming such superfoods for their powerhouse vitamins and nutrients, and beets do not disappoint in those categories. They are high in fiber, which is vital to the digestive process and contain Vitamin C. Another win for the immune system and heart!
